Some thoughts I had a while back, about organizing my own note-making, after beginning to watch a conversation on YouTube between Nick Milo and Eleanor Konik.
Take a look at the Smart Connections plugin for Obsidian, rather than making MOCs. I haven't explored it too much, but it seems to have a lot of possibilities. A key attraction is that it can use AI locally, not sending notes off to some AI cloud (although that is also an option).
