Well, TIL.

I’d known about hybridization and breeding (my father was also a bit of a hobbyist farmer) but not with regard to chickens and the economic interplay.

Actually I liked eating the heritage birds better than the hybrids. Although they were smaller (one meal rather than a meal and leftovers), they had long legs and the meat was a bit "darker" overall. Haven't raised birds in a couple of years. I miss the eggs and meat, but not so much the work.
